Baking

We baked the week of Thanksgiving at our classroom party. We baked Brigadeiros, a Brazilian treat, and Banana Bread muffins. Here are the recipes we made:

Brigadeiro  – Chocolate Brazilian treat (made in a microwave)

Ingredients

  • 1 can of sweet condensed milk (La Lechera, Nestle)
  • 1 tablespoon of butter
  • 1 tablespoon of chocolate powder
  • Sprinkles or chocolate sprinkles

How to make

  1. Put all the ingredients in a glass or ceramic bowl and mix them. Make sure the container is tall enough for the brigadeiro to boil and rise.

  2. Cook for 2 minutes in the microwave. Take it out and stir. Cook for another two minutes in the microwave. Take out and stir again. Cook in the microwave for another 2 minutes. Take it out and stir again. This time, when you take it out of the microwave, you will see that the brigadeiro will have the consistency of a soufflé, full of air bubbles. Be careful, it is going to be very, very hot.

  3. Stir as fast as you can to make sure the consistency becomes smooth and thicker. After that, let it cool down for about one hour (or put into the fridge and leave until cool or room temperature).

You can choose to eat the brigadeiro with a spoon, or if you want to roll it into small “balls”, you can do it. It is recommended.

How to roll in sprinkles – Spread butter in the palms of your hands (or water) and, with the help of a teaspoon, make small balls of approximately one inch. Dip them in the sprinkles, covering them with it. Then place each ball in a mini baking cup or on a plate.

When the treats are ready! Enjoy them!

Banana Bread Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup sugar
  • 3 tablespoon (coconut) oil
  • 2 large eggs, beaten
  • 2 ⅓ cups mashed overripe bananas
  • Chocolate chips

Directions

  • 1. Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×5-inch loaf pan (or muffin pan).

  • 2. Combine flour, baking soda, and salt in a large bowl. Beat brown sugar and butter with an electric mixer in a separate large bowl until smooth. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture until just combined. Add chocolate chips if wanted.

  • 3. Pour batter into the prepared loaf pan.

  • 4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 60 minutes in the loaf pan (or 20 to 25 minutes if using the muffin pan).

  • 5. Let the bread cool in the pan for 10 minutes.

  • 6. Enjoy!
